Makes 10-12
Ingredients:
2 ½ cups rolled oats
¼ teaspoon turmeric
1 cup cashews
Finely grated zest of medium lemon
¼ teaspoon sea salt
1/3 cup maple syrup
¼ cup almond butter
1 teaspoon vanilla
Juice of half a lemon
Desiccated coconut for rolling
What to do:
Place the oats, turmeric, cashews, lemon zest and sea salt flakes into the bowl of a food processor. Blitz until you have a rough crumb.
Add the maple syrup, almond butter, vanilla and lemon juice, and blitz until the mixture comes together.
Shape spoonfuls of the dough into balls, rolling half of the balls in the coconut.
(If you’re finding the dough is sticking to your hands, it can help to have a bowl of water to dip your hands into as you go. This will stop the dough sticking to your hands).
Serve at once, or store in an airtight container in the fridge for up to a week.
